It is not simply a show that is offered to the guests at “Memories”. Nor is it a show kitchen. It is the workplace of the team around Sven Wassmer, the Culinary Director of the Grand Hotel Quellenhof in the Grand Resort Bad Ragaz.
“Taste again as if it were the first time” is part of the credo of Wassmer and his team. Guests therefore do not enjoy an à la carte menu, but a tasting experience with several taste memories. The experiences the guests are treated to depend heavily on the season. The fresh and still young wild garlic that a chef from the team picked in the forest behind the Grand Resort in the morning is only available in spring. Not only seasonality, but also regionality is important to the chef of the “Memories”. Wassmer and his team find the ingredients in the forests and Alps of Switzerland and ultimately combine products from Switzerland with the best from all over the world.
