Alcohol-free refreshment: jezz Swiss stone pine lemonade
In the alcohol-free version, "jezz Zirben-Limonade", Swiss stone pine, lemon and rosemary combine to create a pleasant refreshment and a soothing alternative to conventional lemonades or iced teas. Served in a lemonade glass with a few ice cubes:
8 cl Swiss stone pine syrup - varies depending on the syrup and must be flavored according to preference
0.3 l soda
1 cl lemon juice
Decoration of 1 sprig of rosemary and 1 slice of (dried) lemon
Signature sundowner drink: the jezz Kaiser Sprizz by Thomas Ellwanger
Capturing the feeling of the mountains in the taste of the signature drink was the mission of head chef and award-winning chef Thomas Ellwanger. This is how he created the "jezz Kaiser Sprizz". Together with tonic water and rosemary, the result is a refreshingly tart taste that combines the mountain feeling with a sparkling lightness. Ellwanger associates the aperitif with something very special, as he himself writes the story of the Zirbe & Rosè sparkling wine: "My grandfather wanted me to become a winemaker, but I was drawn to the mountains. The easiest way to get there was through cooking. During the coronavirus pandemic, I came up with the idea of creating a sparkling wine with Swiss stone pine so that I could continue to run the vineyards in the Rems Valley in the long term. Together with Aaron Schwegler, we experimented until we were able to produce the perfect sparkling wine. To fully experience the specialty and character of the sparkling wine, you should close your eyes before taking your first sip and imagine a forest with the scent of resin, fresh herbs and berries. The rosé sparkling wine is noticeable at first, but the Swiss stone pine unfolds on the finish. If you leave the glass to stand for a short time, this aroma intensifies further. The Swiss stone pine needs the right temperature to fully develop - the colder the sparkling wine, the more subtle the effect."
